The SOUP Method
SOUP is a low-pressure, espresso-style brewing method: you push water through a coffee puck, but ground coarser than espresso so that almost no pressure builds (generally under 1 bar) while flow stays high. A gentle soak wets the bed, then a slow, soft press pulls the shot. The result is an espresso-strength concentrate, thick and syrupy, at espresso-level TDS (~9-11%) and ratios near 1:4, yet clearer and more drinkable than a 9-bar shot: you get foam, but none of the oily crema. It is especially good at the dense ultra-light roasts that choke a real espresso machine. π₯
The name is a playful coinage from the Espresso Aficionados ("espressoaf") Discord, popularized by a community member known as DC (who notes he didn't invent it) and brought to a wide audience by Lance Hedrick. It's commonly backronymed "Spro, Only Un-Pressurized."
#Why It Works
Real espresso forces water through a fine puck at about nine bars. That extracts fast but invites channeling and over-extraction (harsh, bitter, astringent), particularly with hard, light roasts. SOUP inverts the trade: a coarser grind opens the bed so water flows freely at under 1 bar, the soak saturates every particle evenly so nothing channels, and the slow press maximizes even contact without compacting the puck. You reach espresso-level strength through high, even extraction rather than brute pressure, so the cup lands sweet, clear, and vibrant instead of bitter and oily.

Both devices suit SOUP because they make the low-pressure press easy to control. The OXO Rapid Brewer naturally caps the pressure and gives tactile feedback on puck resistance, making it the easiest on-ramp; the AeroPress gets there with a tamped bed and a deliberately slow, gentle plunge. Either way you can drink the shot straight, cut it with milk, or dilute it Americano-style. Strength is set by ratio and grind, just like any recipe.
