OXO Rapid Brewer SOUP Recipe
The OXO Rapid Brewer is the easiest on-ramp to SOUP: its pump mechanism prevents you from building too much pressure by accident and gives tactile feedback on puck resistance, so the low-pressure press almost runs itself. With a coarser-than-espresso grind and a gentle, sub-1-bar push, it pulls a clear, espresso-strength shot with the vibrant acidity SOUP is loved for. β±οΈ

#Pour Schedule
- Setup: Seat a paper filter; add 20-22 g coffee ground between pour over and espresso, and level the bed.
- Charge: Add ~88 g water just off the boil to the reservoir and screw on the pump.
- Soak: Press slowly, gently, and consistently until the underside of the screen is evenly coated with coffee. That's the soak, so don't force it.
- Press: Once the puck is saturated and the plunger moves without resistance, keep pumping smoothly; pressure should stay under 1 bar throughout.
- Finish: Total time is short, ~20-30 s. You'll have a clear, concentrated shot; drink it straight, with milk, or diluted.
#Why It Works
SOUP reaches espresso-level TDS with coarser grounds and almost no pressure by trading brute force for an even, unhurried extraction. The OXO makes that easy: because it physically resists over-pressurizing, you stay under 1 bar without thinking about it, and the coarser bed flows freely so nothing channels. The payoff is espresso strength with pour-over clarity, ideal for the dense ultra-light roasts that resist a 9-bar machine. It's the same idea as the AeroPress SOUP Recipe, with the device doing the pressure-limiting for you. Dial grind for balance (coarser = more clarity, finer = more body) and ratio for strength; see Recipe Variables and Cup Outcomes.
