Chemex
The Chemex is the most elegant object in coffee β an hourglass-shaped, all-in-one glass decanter that is simultaneously the dripper and the server. Designed in 1941 by chemist Peter Schlumbohm (see Chemex and Peter Schlumbohm), it is a permanent fixture in design museums. But its signature is in the cup: a very clean, tea-like, almost translucent brew, the product of an unusually thick bonded paper filter. It is a conical pour over with a personality all its own.

#Why the Design Works
The Chemex's defining feature is its filter. Schlumbohm's bonded paper is far thicker than ordinary filter paper, so it traps not only grounds but most of the oils and finest particles that give other brews their body. The trade-off is a slower flow and a cup of exceptional clarity. The single-piece glass forms an air channel along the spout so trapped air can escape during the pour β its substitute for ribs. Because the filter restricts so heavily, the Chemex runs a coarser grind than a V60 to avoid stalling.
Chemex filters fold into a cone with three layers on one side. Place the three-layer side against the spout β it reinforces the paper over the air channel and keeps the filter from collapsing into it.
The thick filter and lack of ribs make the Chemex prone to stalling if the grind is too fine. If drawdown drags, coarsen up rather than fight it. This same restriction is why the Chemex makes such a clean cup β see The Drawdown.
