Agitation and Turbulence
Agitation is the physical energy you add to the coffee bed β through pour force, stirring, or swirling. It is one of the most powerful and least understood levers in pour over. More agitation means more extraction; too much means harshness and channeling. Learning to dose agitation deliberately is what separates a flat cup from a vibrant one.
#Why Agitation Raises Extraction
Extraction is a transfer of soluble compounds from grounds into water. Agitation speeds that transfer in two ways: it keeps fresh, less-saturated water moving against the particle surfaces, and it dislodges fines and breaks up clumps so every grain is exposed. The result is a higher extraction yield for the same grind and time. See The Science of Extraction for the underlying mechanism.
#Where Agitation Comes From πͺ
| Source | How to add | How to reduce |
|---|---|---|
| Pour energy | Higher kettle, faster flow | Pour low and slow |
| Pour count | More pulses | Fewer, gentler pours |
| Stirring | Stir bloom or slurry | Skip stirring |
| Swirling | Swirl the dripper | Let it sit still |
The Rao spin β a gentle swirl after the final pour β is a celebrated agitation tool: it settles grounds off the filter walls and flattens the bed for an even drawdown.
#The Risks of Too Much β οΈ
Aggressive agitation can over-extract, drag bitterness into the cup, and β worst of all β carve channels in the bed that let water bypass the coffee entirely. Excess turbulence also kicks fines down to clog the filter, slowing drawdown and dragging out contact time.
#Tuning Agitation in Practice
Think of agitation as a dial you balance against grind and ratio:
- Cup tastes weak / sour / under-extracted? Add agitation β pour with more energy, add a stir, or swirl.
- Cup tastes harsh / bitter / drying? Reduce agitation β lower the kettle, pour gently, stop stirring.
- Bed has craters or coffee on the walls? You are over-agitating in one spot; spread and soften the pour.
Agitation interacts with everything. When dialing in, hold grind and ratio fixed and vary agitation alone so you can feel its effect cleanly β then lock it in.
Agitation is the hidden variable behind why two people following the same recipe get different cups. Control it on purpose and your brews become repeatable.
