Agitation is the physical energy you add to the coffee bed β€” through pour force, stirring, or swirling. It is one of the most powerful and least understood levers in pour over. More agitation means more extraction; too much means harshness and channeling. Learning to dose agitation deliberately is what separates a flat cup from a vibrant one.

Extraction is a transfer of soluble compounds from grounds into water. Agitation speeds that transfer in two ways: it keeps fresh, less-saturated water moving against the particle surfaces, and it dislodges fines and breaks up clumps so every grain is exposed. #Tuning Agitation in Practice

Think of agitation as a dial you balance against grind and ratio:

  • Cup tastes weak / sour / under-extracted? Add agitation β€” pour with more energy, add a stir, or swirl.
  • Cup tastes harsh / bitter / drying? Reduce agitation β€” lower the kettle, pour gently, stop stirring.
  • Bed has craters or coffee on the walls? You are over-agitating in one spot; spread and soften the pour.
