IPA and Cheese Pairing
Cheese and beer are old companions, and the IPA may be the most rewarding β and most dangerous β beer to pair with cheese. Hop bitterness can either cut beautifully through fat or collide with it. This note drills into the pairing introduced in Food Pairing with IPAs.
#Why IPA and Cheese Can Clash
Cheese is rich in fat and protein; an IPA brings bitterness, carbonation, and hop aroma. When the match works, carbonation and bitterness scrub the palate clean between bites and hop fruit lifts the cheese. When it fails, hop bitterness collides with a cheese's own bitterness or its rind, producing a harsh, metallic clash.
Pairing a very bitter West Coast IPA with an already-bitter washed-rind or aggressively aged cheese can stack two bitternesses into something unpleasant. When in doubt, choose a softer or more aromatic IPA.

#Practical Tips

- Move from mild to strong. Taste fresh and delicate cheeses first; finish with blue. The same ordering logic governs a tasting flight.
- Add a bridge. Honey, fruit, or nuts on the board can soften a tricky pairing β fruit preserves are excellent peacemakers between hop bitterness and a salty cheese.

If you try only one combination, choose sharp cheddar with a fresh West Coast IPA. It is the cleanest demonstration of bitterness cutting fat β a near-foolproof entry point into beer-and-cheese pairing.
