The New England style trades clarity and bitterness for aroma and texture. These beers lean on huge late and dry-hop charges of Citra, Mosaic, and Galaxy, soft water with a low sulfate level, oat- and wheat-laden grists, and fruity yeast that drives Biotransformation.
