Cascade is the hop that started it all. Released in 1972, it gave American craft brewing its first distinctive flavor signature β€” a bright grapefruit citrus utterly unlike anything in European brewing β€” and made the modern IPA possible.

#The Craft Pioneer

Cascade's place in history is secured by Sierra Nevada Pale Ale (1980) and Anchor Liberty Ale (1975), the beers that taught American drinkers what citrusy hops tasted like. β„ΉThe original "C-hop"

Cascade is the founding member of the American "C-hops" β€” joined by Centennial and later Citra. Its grapefruit-and-floral profile is the reference point against which later varieties are measured.

#Character

By modern standards Cascade is moderate β€” lower in alpha acid and gentler in aroma than today's tropical powerhouses. Its character is clean grapefruit, soft floral notes, and a hint of spice. This restraint, once cutting-edge, now reads as classic and balanced.

#Use in IPA

A dual-purpose hop, Cascade works across the boil but shines as a late and dry-hop addition. It remains a staple of the traditional West Coast IPA and is a reliable, widely available, relatively affordable choice β€” unlike the contracted proprietary hops in Hop Contracts and the Hop Supply Chain.

✦Not obsolete β€” foundational

Brewers chasing the newest thiol bombs sometimes overlook Cascade, but it remains essential for retro West Coast recipes and as a balancing hop that adds brightness without overwhelming.
