An IPA is a Hops-forward pale ale defined by assertive bitterness, aroma, and flavor. Born of British pale-ale tradition and reborn in the American craft revolution, it has fractured into dozens of sub-styles β the crisp, bitter West Coast IPA; the soft, juicy New England IPA; the hop-saturated Double IPA; and frontier experiments like the Cold IPA and Brut IPA. More than any other beer, the IPA is the canvas on which modern brewing innovation is painted.
